You’re in for a treat, because this Banana Bread with Chocolate and Walnuts is absolutely delicious with it’s soft and moist bread and cake like consistency. It has reached the perfect combination between sweet and savoury, making it the perfect snack to go with your coffee or tea.
I usually eat it by itself, or with a dollop of peanut butter, that goes well with the banana and cinnamon taste.
– INGREDIENTS –
3 eggs
2-3 ripe bananas, depending on size
145 g flour
2 handful cashew nuts
1 tsp vanilla powder
1 tsp cardamom
1 tsp cinnamon
1 tsp baking powder
3-4 dates
100 g dark chocolate, 85%
1 handful walnuts
Toppings
1 banana
1 handful roasted coconut chips
– DIRECTIONS –
- Preheat the oven to 175° celsius. Blend all the ingredients for the dough in a food processor, make sure to sift the flour and spices before adding them to the mixture.
- Line a bread or regular cake tin with parchment paper, and fill 1/3 of the dough into the tin. Chop the chocolate into small chunks, and sprinkle the dough with 2/3 of it. Spread a second layer of dough on top, and sprinkle 2/3 of chopped walnuts. Spread a third and final layer on top. Sprinkle with the remaining chocolate and walnuts.
- Bake the bread for 40 minutes in the oven. Upon removing it from the oven, top it with a handful roasted coconut chips. Let it cool completely before serving.
TIP: to make it gluten free, switch out the flour with 100 g almond flour and 45 g coconut fiber flour.
