These chocolate stuffed cookies taste and look like something straight out of a fancy Parisian bakery, don’t they? Would you believe that they are made solely out ingredients that are good for you, and (as always) no sugar? Well, they are. The main ingredients are oats, dates and avocado, and – to make things even better – the recipe is quite easy. It took me only 20 minutes to make a batch, and then I was ready with coffee and cookies for my friends.
And the thought that these cookies were made with super healthy ingredients like avocados and oats never struck them!
– INGREDIENTS –
COOKIES (yields 4 large cookies or 8 small)
4 dl / 1.5 cups oats
2 dl / 0.8 cup pitted juicy dates
1 tsp pure vanilla powder
CHOCOLATE STUFFING
1 avocado
4 tbsp cacao powder
1 tsp pure vanilla powder
2 tbsp coconut oil, melted
2 tbsp pure maple syrup
50g dark chocolate (85%), melted
+ a little extra chocolate to drizzle on top and freeze dried berries
– DIRECTIONS –
- Start by making the cookies. Simply add all the ingredients to preferably a food processor, but a blender can also be used, and pulse until you have a cohesive cookie dough. If it’s too sticky add more oats, and if it’s too dry add a couple more dates.
- Use a rolling pin to roll the dough out until it is about 0.5 cm in thickness. Use a cookie cutter or a small glass to cut out either 8 large or 16 small cookie. Place them in the freezer while you make the stuffing.
- Make the chocolate by simply blending all the ingredients, except the chocolate, until you have a creamy and completely climb mousse. Stir in the melted chocolate with a spoon. Let it set in the fridge for about 10 minutes.
- Take the cookies out of the freezer and divide the stuffing evenly on half of the cookies. Use a spoon or a piping bag. Place the remaining cookies on top of the chocolate filling.
- Drizzle with a little chocolate and sprinkle with freeze dries berries, and they are ready to be served. Store in an air-tight container in your fridge for 2-3 days. Enjoy!
