This is a great on-the-go snack, since it can be made the day before, and it’s easy to just pop it in the bag, and go. The date mixture has a sticky almost caramel-ish consistency to it. When it is mixed with the yoghurt it will give the plain yoghurt a wonderful taste.
If you are going to take it with you, I recommend putting a layer in between the yoghurt and the granola, maybe this could be a layer of fruit, or anything else you have in mind.
I started off blending everything except the yoghurt, so it could all get chopped up and mixed together, after that I blended in the greek yoghurt.
– INGREDIENTS –
2 tbsp peanut butter
1 tsp vanilla powder
400 ml greek yoghurt
– DIRECTIONS –
- Place dates, peanut butter and vanilla powder in food processor and pulse. Blend until everything is mixed well together.
- Add yoghurt to mixture and pulse again. Make sure to scrape the bottom, getting all the date mixture mixed into the yoghurt.
- Top with toppings, and enjoy!
