Usually I’m not that big a fan of chia porridge, so when I was making this, I was quite sceptical. To my surprise it was delightful! The taste of the berries make the porridge taste similar to a berry smoothie, but it’s a lot more nourishing and filling.
This is an overnight recipe, so prepare it the night before, it needs to soak for at least 8 hours in the fridge. Mix milk and berries in a blender, stir in the chia and soak overnight.
– INGREDIENTS –
1 cup / 2 dl plant based milk (I used almond milk)
1 cup / 2 dl mixed berries
4 tbsp chia seeds
1 banana, ripe (optional)*
toasted coconut, dessicated
1 kiwi
dried cranberries
– DIRECTIONS –
- Blend milk and berries in a blender until thin smoothie like texture.
- Pour up in a bowl. Stir in chia seeds.
- Let sit overnight (or at least 8 hours) in the fridge and enjoy the next day! Top with any toppings you like! *mash a banana and add it in right before eating if you a little extra.
