Banana Pancakes

Pancakes for sunday brunch is good, but why only limit it to that? When they taste this good, and are this healthy, why aren’t you eating them all the time? I am! These pancakes are perfectly squishy, and taste amazing!

They are super simple. You mix the mashed bananas, eggs, oats, flour and salt together, then you fry them into pancakes, and there you have it! Top them however you want, my sister and I love to top with natural greek yoghurt and raspberry jam. The combination is a bit unusual but it is delicious! Peanut butter is of course amazing as well! Decorate with berries, edible flowers, and anything you can imagine :).

– INGREDIENTS –

2 ripe bananas

3 eggs

1 dl rolled oats

1 dl flour

a pinch of seasalt

oil for frying (I use coconut oil)

– DIRECTIONS –

  1. Mash the bananas with a fork. Mix the remaining ingredients into the dough.
  2. Use approx. 2 tbsp. batter per pancake. Place the batter on the pan, and smoothen out with a spoon.  I fit 3 pancakes on my pan, and I use 2 tbsp. batter per pancake.
  3. Fry on both sides until light brown.
  4. Serve them immediately or store the leftovers in the fridge.
